Onigiri experiment #1. (Link is to instructions online)
Three measures of rice (two of genmai brown, one seven grain congee mix) yielded 8 onigiri. Fillings: shitake mushrooms and wakame, and furikake. Cooking ratio: 1 cup grain to 1.5 cup water; 25 minutes in microwave rice cooker, followed by a stir and 3 hours in the fridge. Serving size template: small white porcelain bowl.
Evaluation criteria: how well do they hold up (i.e. rice sticks together?) and how does the serving size match my appetite?
